Almost 90% of the wine produced in Provence is rosé! And why not? It’s such an ideal match with Provençal food that we could certainly have given you a set of four rosés to match this month’s menus. Instead, I’ve chosen one rosé de Provence, and skipped around the country to find three more interesting wines that I think pair beautifully with the dishes. Santé!

Menu 1 – François Labet Cuvee Loraine Blanc de Blancs Brut NV
We had to have some bubbles, and this dry cuvee of classic Champagne grapes – pinot noir and chardonnay – rounded out with lesser known ugni blanc and rolle, cuts beautifully through the rich bouillabaisse broth the chicken is poached in. Its floral nose and tiny touch of sweetness marries well with the onion, fennel, saffron and orange too.
Menu 2 – Domaine Mosnier 2021 Petit Chablis AOC*
This easy drinking chardonnay from the Chablis sub-region of Burgundy is an ideal match with our grand aïoli. The zingy citrus cuts through the richness of the garlic and mayonnaise and the light, fresh finish is perfect with the vegetables and poached salmon. My favourite match of this pack!
Menu 3 – Domaine de Grandpré 2021 Rosé de Provence AOC*
With the typical Provençal pale apricot-pink blush and slightly floral nose, this rosé is great alongside our salade Niçoise. It has a long dry finish, enough body to match the tuna and a slightly bitter, almost salty, finish that marries well with the anchovies and olives.
